Brut Tradition – Blanc de Blancs
Payelle’s Brut Tradition is a rare “Blanc de Blancs” champagne (literally meaning ‘white from whites’); it is champagne exclusively made from the white Chardonnay grape. Less then 5% of the total production of champagne is a Blanc de Blancs champagne!
The Brut Tradition is a fresh, thin and fruity champagne with a beautiful balance. Ideal on its own or with a light fish course, this Blanc de Blancs proves ridiculously easy to drink. It is the perfect aperitif and your companion to celebrate life! 100% Chardonnay.
Brut Vieille Réserve
The Brut Vieille Réserve contains a high proportion of ‘vins de garde’ (wine that has been kept fort his purpose) which creates a well structured and vibrant champagne. Brut Nature – Skinny
The white bottled Brut Nature is a big eye-catcher and also the ideal champagne for weight consious people. Brut Nature means no sugar is added to the liqueur d’expedition (a mix of vintage wines which is added after the sediment is removed from the bottle). Is it champagne that is better for you!? YES! We can drink as much as we want! 37% Chardonnay, 63% Pinot Noir.
Millésime champagnes (also known as Vintage champagnes) are made from a single year’s crop and are only produced when the grapequality of that year is perfect. Medium quality? No Millésime.
Before the Millésime 2006 hit the market it rested for 8 years in one of Payelle’s chalky cellars. Brut Vieille Réserve – Blanc de Noirs
An extraordinary champagne: only 1 % of the total production of champagne is Blanc de Noirs champagne. Blanc de Noirs is a French term that translates as ‘white from blacks’, meaning white wine is made from black grapes. The village Ambonnay, where champagnehouse Payelle is situated, is mainly known for the best quality of the Pinot Noir grape in de Champagne area. This year Payelle decided (for the first time) to release the Brut Vieille Reservé – Blanc de Noirs: a grand cru champagne exclusively made from the Pinot Noir.
Payelle’s Blanc de Noirs champagne has a deep golden colour and is fuller bodied and more powerful than its Blanc de Blancs counterpart. It makes a great pairing with full-flavored foods, such as meat and cheese. 100% Pinot Noir.
